As I have discovered this month, sometimes the best things to come out of the kitchen happen as a result of keeping things simple. From miniaturizing banoffee pie in less than 6 steps to DIY takes on classic snacks to surprisingly simple homemade Reese’s peanut butter eggs, my March has been filled with tasty treats without a lot of hassle. It may have started when in 7th grade when I had to come up with a math lesson for class and taught my peers how to triple a batch of peanut butter squares with algebra and actual baked goods… but only half of them made it to class [whoopsie]. Really, though, I should have seen the signs earlier, like when, at age 8 I asked my dad to buy me an entire box of Reese’s cups from BJ’s or, at 6 when I shamelessly pilfered Reese’s peanut butter eggs from my sister’s Easter basket when she wasn’t looking. Friday, I’m in Love: The Birthday edition!

Well, folks, it’s that time again. Friday is glorious for many reasons, but today is especially special for a few reasons. First and foremost, it’s my BIRTHDAY! (yay!) which means that I headed up to CT for the weekend, took the day off to do and eat whatever the heck I please and am spending a long weekend with my family and friends.

Despite being a terrible sharer, I don’t want to hoard all the fun. I’m bringing along some cupcakes AND presents for you in the form a GIVEAWAY! (woohoo!) More on that at the end of the weekly love. (You’ll want to read on. Trust me, it’s a good one!)

If you’re like me and have read up on mindfulness, I have no doubt that you’ve come across some gem of life advice reminding you to see the world with the eyes of a child and take in all you see with a sense of wonder. Well, I have a strange way of interpreting that. I still think of the interactive possibilities of Twitter with a sense of wonder. When I won a contest and Dorie Greenspan tweeted that she loved the fortune cookies I made for an ex-boyfriend, I felt like I had just met a celebrity. When Andrew Zimmern followed me back on Twitter, I brushed the dirt off my shoulder. And yesterday, when I instagrammed David Lebovitz’s gluten-free peanut butter brownies and he retweeted them, I audibly gasped in the middle of a meeting when I saw the notification pop up on my phone. And he called them beautiful! Whaaaaat.

Anyway, after he retweeted, a few folks asked for the recipe via Twitter and I got a surprising number of searches for “kelly bakes gluten-free peanut butter brownies.” I didn’t want to leave any of you in a deprived state of gluten-free brownie-less wonder, so you can find the recipe here. The brownies are fudgey (my favorite texture) and chocolatey. To make them peanut butter, I simply added globs of natural salted creamy peanut butter (I used Trader Joe’s) to the top of the unbaked brownies and then swirled it around with a knife. When making the brownie batter, be sure to beat vigorously for a full minute, as David suggests. I skimped and didn’t beat them long enough and the brownies broke when I went to remove them from the pan (not that I minded. Still delicious!). Have you ever had a celebrity interaction via Twitter? All My Life’s a Cookie Swap: Homemade Chocolate Peppermint Sandwich Cookies

The past two weeks have been the most cookie-laden weeks of my life. It all started with the #CookieSwapNYC, an event put on by Maggy Anderson-Keet and Lillian Huang of the amazing group, Bloggers Without Borders. Like most things in the blogging world, I’m a little late to the game, as this was the second annual swap, but my first time going. I’m certainly glad I did! Half of the ticket cost went to benefit WhyHunger, a leading advocate for community-based solutions to problems like poverty and hunger. I was excited to be a part of BWoB to begin with, but partnering with WhyHunger was even more meaningful for me because it was founded by Harry Chapin, who I’ve been a fan of since I was little. My mom listened to him while I was growing up and always spoke about what a good heart he had and how she admired his commitment to helping others. [Read more...]
